Here in the NY area, the temps have been mild all winter but this week hit the much awaited “Spring Is Here To Stay” neighborhood. That said, it’s time to dust off the deck, break out the grill and get started on one of my favorite things to do.. cooking outdoors! Now, when I say cooking outdoors I most definitely don’t mean a cooler of frozen burgers and soggy paper plates loaded up with hot dogs..No sir, I am talking so much more. I beleive it is easy for you to live outside with as much style as you do inside..and everyone who knows me knows the Red Plastic Cup has no place ‘round these parts! You spent all winter dining n pretty dishes and sparkly wine glasses, why not carry that outside? The important thing is not just to be stylish, but comfortable and easy. If not, what’s the point?
If you need a new patio set, it’s best to buy one now while you are assured to find the best selection at a great price! Also, you don’t want to wait till barbecue season is in full swing to purchase a set, start looking now! I like sets that are durabel, comfortable and easy to clean. With two little ones, the fluffy white cushioned sets probably aren’t my best bet. Also, I tend to be a little fickle, so I like to go with something not considered an “investment piece”. It’as just how I roll in outdoor furnishings..mid range.
You must have a grill. They vary from basic charcoal to Pimp Daddy BBQ and everything in between..a lot of this depends on your cooking bravado and the man in the house. I like to call it the big screen TV of the outdoors! If you have the space, always go bigger. They look cool, they perform well and you’ll have them forever! There are so many to choose from. I’m thinking this year, we might go a little bigger. I love cooking outdoors since it’s so healthy and easy to clean up! I saw a couple of small space outdoor kitchens on hayneedle that were great looking and still well priced!
Even though I like to live my life outdoors in style, I always appreciate a little old school vibe when it comes to the first weeks outside when we get cooking! I’m talking burgers, chicken, corn on the cob and cole slaw! It just feels right..Besides, I have all summer to grill veggies, pineapple and salmon..I have a great recipe for Mexican corn that my friend Tatiana gave me and your whole family is guaranteed to love it..after living half my life in Miami, we always like to add just a touch the tropics to everything we do..after all, it’s in our blood! Serve up your food with some mango infused cocktails or a pitcher of cold lemonade..either way, it’s so refreshing!

Tatiana’s Mexican Corn On The Cob 1 4 ears corn, shucked 2 1/4 cup melted butter 3 1/4 cup mayonnaise 4 1/2 cup grated parmesan cheese 5 1 T chili powder 6 4 wedges lime (optional)
Directions 1. Preheat an outdoor grill for medium-high heat. 2. Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cheese/chili powder mixture and serve with a lime wedge. XO Courtney
